El Senado is another beautiful coffee from one our partners in Colombia, La Palma Y El Tucán. La Palma y El Tucán is one of the most, if not the absolute most, progressive coffee producers in the world. We've been working with them since 2013. One of the things that makes La Palma y El Tucán so special is their scientific and experimental processing methods.  El Senado was produced with a Lactic Fermentation processing method.  In this process, coffee is left to anaerobically ferment in cherry for up to 100 hours.  After this fermentation the coffee is then depulped and washed before being dried.  Controlled fermentation in the coffee cherry increases the concentrations of Lactic Acid in the coffee seed.  This gives the finished coffee a very complex acidity and sweetness highlighted with jammy fruit tones and a pillowy body.  

El Senado is a super unique coffee with confectionary notes reminding us of raspberry-jam filled powdered-donuts.  If you're a fan of complex and fruity coffees you've got to give it a try.
