This Ethiopia Keffa Wush Wush was sourced from Catalyst Coffee during our trip to Ethiopia this past winter. It is an absolutely beautiful cup with a soft body, delicate floral notes and a clean, fruity sweetness with an herbal-tea like crispness.  

It comes from the Keffa people in the Wush Wush village located in the Kaffa zone of Ethiopia. The varietal is also an heirloom varietal called Wush Wush, named after the area where it originated.  

The coffee was processed with a double washed method wherein the coffee is depulped, fermented for 36 hours under water with the water changed after the first 18 hours. It is then emptied into washing channels where it is agitated with rakes and during this process the water is changed out twice. After washing the coffee is then soaked in clean water for 12 hours, the "double wash", before being dried on raised beds.  

Once at the dry mill and ready for export the coffee is then sorted by screen size, gravimetric sorters, density sorters, optical sorters and finally hand sorting. All of this removes defects and ensures a consistent bean size throughout the lot.  

Catalyst pays all workers involved in the processing of this coffee a daily bonus that is 300% over their regular daily pay.  The extra effort pays off as this is an excellent representation of a washed Ethiopian Keffa coffee.  Enjoy!
