Edwin is the neighbor of Leonela and Alberto and is a newer member of the association in Casabianca, (Asociación de Calficultores Diferenciados del Norte del Tolima). Don Edwin grows a handful of traditional and hybridized varietals on his farm at 1,600 meters above sea level. This lot is a blend of Castillo and CR95 varietals that has been processed with the double-fermentation washed method. With this method, the coffee is fermented in-cherry for up to 24 hours followed by pulping and additional dry fermentation in a tank. After this secondary fermentation, the coffee is then washed with clean water and shade dried. This style of processing adds a complex brightness to the cup and increases the natural sweetness. We are finding sweet and buttery, white chocolate notes complemented by a complex brightness reminiscent of stone-fruit and fragrant lemon.
