Espresso Extraction Theory

Learn the theory that explains how to strategically affect the espresso’s flavor profile by modifying the variables in an espresso recipe.  This hands-on course will explore mechanical technique, ratios, time, temperature and pressure, and the role each variable plays in creating and maintaining an espresso recipe.  Attendees will walk away with a more cemented knowledge and proficiency of dialing-in espresso and maintaining consistency from shot to shot.

This course is part of our continued education program designed specifically for our wholesale partners and is offered at no cost on a first come, first served basis.

Milk Preparation and Latte Art

Learn the science and the proper techniques behind steaming, stretching and texturing milk.  

This hands-on course will explore how to properly prepare milk for hot espresso-based beverages and learn the science of milk preparation.  Latte art pours and techniques will also be taught through individualized hands-on instruction.

Barista Bar-Flow and Efficiency

This course is designed to increase barista efficiency and productivity, while also helping to decrease stress associated with working a busy coffee bar. 

Through the implementation of systematic and intentional actions, improved communication, and the elimination of wasted movements behind the bar, we will demonstrate methods to build barista confidence while focusing on increasing speed and maintaining control and accuracy.  

This hands-on course puts the baristas into a “simulated service” to learn the methods in a close-to-real-life setting.

Sensory Analysis

This course is designed to build sensory skills involved in evaluating the many flavor and aroma traits in coffee.  Attendees will learn how to properly cup and score coffee using the industry standard SCA cupping form.  They will also be put through various palate building exercises designed to increase ability in flavor and aroma recognition and will work on building their vocabulary in speaking about flavor profiles in coffee.  Attendees will walk away with a better understanding of quantifying the taste and aroma characteristics of coffee.  This will enable attendees to better and more accurately describe coffee characteristics and develop coffee extraction recipes.
