A very fruit-forward and complex cup with outstanding clarity and brightness.  This coffee comes from a group of 800 small-holder farmers in the Yirgacheffe district of the Gedeo Zone and was sourced through our friends at Catalyst Coffee and Dominion Trading.

The characteristics in the cup are a direct result of the care taken in the separation and processing steps.  Upon delivery to the washing station this coffee was floated to separate any over or under ripe coffee cherries, a step that is typically overlooked in traditional, natural processed coffees.  This separation process was used several times during the drying of this coffee.  It is very important to be meticulous with these methods to avoid rehumidifying the coffee during drying.  The coffee was dried on raised beds and carefully turned by hand during drying to prevent over fermentation and rotting.  During the hottest times of the day the coffee was covered and dried in shade.  The cherries are also covered during rainfall and overnight.  These extra steps in processing dramatically increase the clarity and dynamic acidity in the cup, characteristics that most naturally processed coffees unfortunately lack.

In addition to the detailed processing at the washing station, this coffee also undergoes stringent sorting at the dry mill.  The underwent gravimetric and density sorting as well as optical and very detailed hand sorting.  

We are super stoked to offer such a dynamic and complex naturally processed coffee and feel that this is one of those coffees that can open minds to the vast flavor and aroma possibilities in coffee.  In the cup we find notes of cranberry, peach and hibiscus as well as pineapple, grape and passionfruit, reminiscent of a super juicy tropical punch!
